1- What is the Tanjia?<\/h3>\n

Tanjia is a cooking jar and the name of the stew inside .<\/p>\n

\u00a02-The name :<\/h3>\n

This special dish\u00a0 is called bent rmad (the daughter of ashes ) or the bacherler s dish ( a dish\u00a0 that the unmarried people make )<\/p>\n

\u00a0 3-The history\u00a0 :<\/h3>\n

the pot s history dates back to the roman empire<\/a> .<\/p>\n

Originally , people used it to transport olive oil and then becomes a cooking jar .<\/p>\n

The tanjia is mostly associated with men rather women and it is easy to cook .<\/p>\n

When the marrakechi traders take a day off , they go to picnic parks to relax , chat and eat this special dish .<\/p>\n

\u00a04-The ingredients<\/h3>\n

(Garlic , Saffron<\/a> , Tumeric , Salty butter (semen) , Cumin ,\u00a0Olive oil ,\u00a0Water )<\/p>\n

\u00a05-How is it cooked ?<\/h3>\n

First of all , we put all ingredients together in the jar and we shake it .<\/p>\n

Second , we put a paper lid on the jar and sealed it with dead bread dough .<\/p>\n

Third,we pierce the paper lid to steam the Tanjia .<\/p>\n

The Tanjia takes time to cook , preferably on a slow fire while the meat should have bones ,tendons and fat to be tasty .<\/p>\n

The fernatchi( worker who heats the hammam<\/strong><\/a> )\u00a0 ,normally , puts the tangia on ashes for the whole night or from the early morning .<\/p>\n

After a few hours of cooking , the meal gets so gelatinous and soft .<\/p>\n

Actually , the best meat part to make the Tanjia is calf s tail , shank and the hock .<\/p>\n

Today , the Tanjia can include rabbit , chicken , lamb and even fish .There is a vegeterian version of it ,even .<\/p>\n
